Grind Time: Plancha pops up in Manoa

After stints in the kitchen at Apartment3 and 12th Avenue Grill, chef Bob McGee finally has a new project to call his own.

Starting next week, the New York native will operate a pop-up restaurant three nights a week at Morning Glass Coffee in Manoa. Named Plancha, McGee’s new culinary adventure will focus on simple, locally-sourced ingredients cooked on a flat-top grill.

Here’s the menu for the first night of service on Monday, Sept. 5. According to McGee’s blog, all 20 seats available that night and Wednesday, Sept. 7, have been spoken for; only two seats remain for dinner on Tuesday, Sept. 6:

» First Course: Charred baby beets, citrus, Naked Cow Dairy farmers cheese, perilla leaf

» Second Course: Polenta en cazuela, piperade broth, local quail egg, beet greens

» Third Course: Akule a la Plancha, papaya, Ho farms small tomatoes, cucumber

» Fourth Course: Clafoutis with surinam cherries, vanilla bean gelato

McGee met up with me on Wednesday, Aug. 31, at Plancha’s new home inside Morning Glass to discuss the inspiration for his new restaurant, the mindset necessary to pull off such an intimate meal and what diners can expect in the weeks (and hopefully months) to come. Check out the video below.
