Food La La: How to make Kimchee Pizza

I’ve always wanted to try kimchee as a pizza topping because of its crispy and crunchy texture. So I tried it out with my friend Kelly Loui, and it turned out better than I imagined!

The spicy kimchee covered in melted cheese went perfectly with the other toppings. It’s savory, sweet, and spicy!

We slightly fried the kimchee to get rid of the liquid and to bring out the flavor more. We made our pizza extra spicy too since we added lots of peppers, as well as mixing kochujang and kimchee juice into our tomato sauce. Try it out!

Kimchee Pizza

Ingredients

» 1 ½ cup of chopped kimchee (the sour type is best for this recipe)
» ½ onion
» ½  red pepper
» 1 cup mushrooms
» 1 jalapeño pepper
» 2 Hawaiian red chili peppers
» 4 oz of cheddar cheese
» 4 oz of mozzarella or any other white cheese (We used a 6-cheese variety package)
» 2 Chicken Sausages diced in cubes (You can use any type of meat)
» Teriyaki sauce
» Sesame Seeds
» 1 Pillsbury pizza dough thin crust (You can make your own dough, but we wanted to save time)

Pizza Sauce

» 4 tsp tomato paste
» 4 tsp kimchee juice
» 3 ½ tsp gochujang

Directions

1. Slice onions into half rings and caramelize in a pan on medium heat with vegetable oil. Keep stirring for 5-10 minutes or until they turn brown, but not burned.
2. Squeeze out the liquid from the kimchee and chop up into bite size pieces. Fry kimchee in pan for about 3-5 minutes until the edges are slightly browned.
3. Mix together pizza sauce ingredients and spread on top of pizza dough (Follow directions on the Pillsbury package or make your own homemade dough!).
4. Spread on cheese.
5. Layer on all the pizza toppings.
6. Spread on more cheese.
7. Drizzle on teriyaki sauce and sprinkle on sesame seeds.
8. Pre heat oven at 350 degrees. Bake for 10 minutes until cheese is melted and slightly golden brown.
9. Wait a few minutes for pizza to cool down before cutting. Serve and enjoy!
